White corn is an ancestral grain grown in Italy since the beginning of the 16th century. White corn on the cob has a pearly white color. Like blue, black, red and harlequin corn, it is as widespread in the world as the yellow cob and has existed in nature for millennia.
White corn differs from traditional yellow corn not only in color, but also in flavor and nutritional content. It has similar protein and fiber content, but differs in antioxidants, sugars and nickel (0.074 mg/kg). The impact on the environment is also different: white corn is suitable for not being irrigated and thrives even with only rainwater.
Easy to digest and satiating pasta. The texture is light, delicate and soft.
